This recipe is one that I made many years ago and today I'm wondering why I don't make it more often. It's so simple and absolutely delicious. It is a great dish to prepare for a potluck dinner also. If you have never made this I hope you will try it and let me know what you think.
BEAN SALAD

We've been making a version of this salad for years. We use 2 bags of frozen beans and one bag of frozen peas (rather than canned) that are then cooked per package instructions. No corn since it's double beans. Also, instead of pimento, we use red bell pepper (and thus skip the green one). I've frozen this salad in small portions and then let thaw in the fridge overnight. So yummy!
My mom loves bean salad! Her 83 rd Birthaday is April 8 of this year 2022.. she shared her mom's birthday too!!

This salad is known in our family as Marinated Vegetable Salad. It makes a big bowl full, but I also add an 8 ounce can of drainedmushroom stems and pieces, let it ‘brew’ overnight in the fridge, and keep refrigerated for up to 7 days with leftovers. This is my ‘go to’ for family gatherings. Thank you so much for sharing this with us!
