If you are looking for a quick dish for dinner you are at the right place. This literally takes 5 minutes to put together and 25 minutes to cook. It's delicious and I believe everyone in your family would like it. You can add a green salad and you have a meal. If this recipe is too much for your family just prepare two 8x8 dishes and freeze one to cook later. I really love the idea of having another meal prepared. I believe you will like this dish as much as we do.
INGREDIENTS
3 cups cooked chicken chopped (can use a rotisserie chicken)
8 oz. sour cream
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
1/2 cup chopped onion
1 1/2 cups salsa or 1 can of diced tomatoes and green chiles
1 (11 oz.) can of corn, drained (I used Mexican corn)
2 cups of Mexican cheese, shredded
1 bag of Nacho Cheese Doritos
Preheat oven to 350 degrees. Lightly spray a 9x13 pan with cooking spray.
Crush the bag of Doritos and cover the bottom of pan.
Mix soups, sour cream, onion, salsa, corn, chicken and 1 cup of cheese together.
Pour chicken mixture over the Doritos.
Bake uncovered for 20 minutes. Put the rest of the cheese and bake an additional 5 minutes.
