CHICKEN ENCHILADAS

I love Mexican food. It doesn't matter if it is tacos, enchiladas, or just chips and good salsa. We eat Mexican pretty often. Today I made Chicken Enchiladas and we both loved them. The recipe allows you to add whatever you would like. I would have added black beans but I didn't have any. I will say these are delicious without the beans. I hope you might try these and let me know what you think.

I have made almost the same recipe using hamburger--I just fry the hamburger with the chopped onions, drain the grease and mix it with the ingredients. Delicious also.

I've got these in the oven right now! I made a couple changes due to what I had on hand: used canned chicken breast and green enchilada sauce. Everything else I had. I let the chicken mixture cool to just warm and added some cheese to that and still topped each one with a little more cheese before rolling. We like cheese haha. I added sliced black olives to the chicken mixture because we always had olives in our enchiladas growing up. I love that this is versatile. The house smells yummy and hubby can't wait to dig in!
