I bought a bushel of corn from a local farmer, since we don't grow corn in our garden. I wanted to show you how I freeze corn. It's so delicious and sweet right now. Freezing is a great way to preserve corn.
Wonderful episode, Sue! Your corn looks SO GOOD and talk about cost savings. I was shocked at the price of frozen corn at the store last week. I hope you will use the corn cobs (no -- not for the outhouse -- ha ha!) to make corn cob syrup and/or corn cob jelly. So good and easy to make!
We love our New Jersey sweet corn! We also blanch the corn while still on the cob. The corn then goes into a quick ice bath and onto towels to cool. To cut the corn off I have tried every gadget there is including my Mom's sharp knife she always used. I landed on using one called a CORN ZIPPER! It looks somewhat like a veggie peeler but has a spacer to keep you from going to deep into the cob.You cut it with one side and if you flip it over the spacer bar works like the back of the knife. It is a family project with everyone (4) helping to shuck, silk, blanch, cool, cut off and plac…
Coming from Nebraska, corn country we blanch ours first, then stand the cob in the hole of an angel food cake pan and use an electric knife to cut it off.
