I just love fruit cake and this version is just so easy to make. I put this recipe in my Volume 1 cookbook. I always divide it into half so that I can gift one loaf to a friend or neighbor. I hope you'll give it a try!
My mom always made this recipe. We roll it into a log and then slice them into "cookies" though. We find it's easier that way to not have any waste from someone not able to finish a loaf size piece of the rich desert.
They're amazing that way, so easy to grab a couple and nibble away. The thinner they are the better they seem to taste and you feel less guilty having more of you can "justify" them being smaller 😉
