JANE'S POUND CAKE

Updated: Dec 8, 2023

Several followers have messaged me about a pound cake recipe. I have used several recipes and really like them all. Today I wanted to show you one that was given to me by my best friend, Jane. She got the recipe many years ago from a sweet lady, Granny Barronton. This cake is delicious without adding a thing, but you could add strawberries, peaches, blueberries or ice cream. You will also find this recipe in my cookbook. I have made it many times over the years to take to those who might be sick or to a church function. The video of me making it is on my Mama Sue's Southern Kitchen Facebook page. I hope you will try it sometime and let me know what you think.

INGREDIENTS

  • 8 oz. cream cheese

  • 3 sticks of butter

  • 6 eggs

  • 3 cups of sugar

  • 3 cups of Cake Flour

  • 1 tsp. vanilla

  1. Soften and mix cream cheese and butter.

  2. Stir in sugar. Mix well.

  3. Add eggs, one at a time mixing well.

  4. Add vanilla

  5. Gradually add Cake Flour and mix well.

  6. Spray tube pan with Bakers Joy and pour batter in.

  7. Bake in a 300 degree preheated oven for 1 1/2 hours. Check with a toothpick to make sure that it is done.

I made this cake last Saturday and it was delicious. I did add a few drops of coconut flavoring and a teaspoon of almond flavoring Oh my goodness was it delicious. Hubby loved it too.
