This one-dish meal is tasty and doesn't require much preparation. The rice cooks with the pork chops making clean-up easy. I did find that it took longer to cook than my original recipe stated. On the recipe below I added that I cooked it longer. If you take it out and it looks watery just leave it longer and the rice absorbs the liquid. Add a salad and your meal is ready.

We tried this tonight, it was a disappointment. I love most recipes in her book, but my hubby, who never comments, said he did not want to eat this again...came out like pic, but flavors do not mengle, and took alot longer time to cook, which I believe overcooked pork chop..
I’d omit the soup all together there is way to much liquid in this recipe and personally I’d prefer not to use processed Soup. I’d add something else maybe a cup of frozen(thawed) corn and sprinkle any fresh herbs I might have at end … bam 💥
Can you use different rice like white or brown rice?
I used cream of cauliflower soup and less water than the rice called for since there was liquid in the Rotel. I had to cook this WAY longer than listed and ended up turning the oven up to 375 degrees the last 20 minutes. It was pretty good!
I am going to try this recipe with chicken instead of chops and cream of chicken soup. Can’t wait to see how it turns out. Thank you Mama Sue
