Probably just like you, when I was growing up, we didn't waste anything. If you had leftovers, you ate them as is or repurposed them. One of the best ways to use up any leftover mashed potatoes in your fridge is to make POTATO PATTIES. I just love these! You can find the recipe on page 20 in my Volume 1 cookbook.
