SHRIMP BASIL PASTA

I first ate this delicious dish back in the fall while at our son's in Louisiana. Our granddaughter's boyfriend brought it for supper one night. I immediately asked for the recipe because I wanted to be able to prepare it myself. His mother gave us the ingredients but didn't have an exact measurement of any. I had to come up with my own measurements but think this is pretty close. I know this would be delicious with smoked sausage if you aren't a fan of shrimp. I hope you enjoy this easy to make dish.


INGREDIENTS

  • 1 (12 oz.) package of angel hair pasta

  • 1 (32 oz.) box of chicken broth

  • 4 cups of grape tomatoes

  • 3 cloves of garlic, chopped

  • 1 TBS dried basil (fresh would be better)

  • 1/4 cup olive oil

  • Cooked Shrimp (I bought a bag of frozen, already cooked and deveined)

  • Salt & Pepper to taste

  1. Preheat oven to 400 degrees.

  2. Put tomatoes, garlic, basil, salt, pepper, and olive oil on a cookie sheet.

  3. Roll tomatoes to be sure they are covered in the oil.

  4. Cook about 15 minutes then turn to Broil for 1 minute (watch carefully)

  5. While the tomatoes are cooking, put your dry pasta in a big pan. Turn stove on. Have the chicken broth really hot and add about a cup at a time to the pasta. Make sure that you are stirring often. Continue adding all of the broth and when the pasta has soaked all of the liquid it should be ready.

  6. Add the tomato mixture plus the oil to the pasta.

  7. Add shrimp and toss all together. You may need to add a little more olive oil if needed.

  8. You can top with Parmesan cheese if you would like.
