From my Volume 4 cookbook, Simply Salads, this Spicy Southwest Chicken Salad is easy and delicious. I cooked my chicken in the crockpot throughout the day so that I could assemble the salad quickly for dinner. You can just as easily use a rotisserie chicken that you buy at the store.
