My momma used to make this salad all of the time. It wasn't until I was older that I truly appreciated how good this salad is for a snack or quick bite to eat. You can find the recipe in my Volume 4 cookbook, Simply Salads.

Canning is a lot of work, but we love having fresh tomatoes all winter long. I use them in soups, recipes, or to make stewed tomatoes over cornbread. My stewed tomatoes recipes is in my Volume 2 cookbook.

I'm normally the one that does all of the cooking in our house. When it comes to cornbread, I always let Harold make it. There is something about the way he makes it, that is better than when I do it...even using the same recipe!
